Kale Bean Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 1/2 cup carrots chopped
  • 1/2 cup celery sliced
  • 48 oz chicken or vegetable broth
  • 3 cups water
  • 6 cups kale rough chop
  • 2 cans cannellini beans drained and rinsed
  • 1/2 tbsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • salt and pepper

Instructions
 

  • Heat large pot over medium high heat
  • Add oil and onions and cook for 3-4 minutes
  • Add carrots and celery to the pot and cook for 3-4 minutes
  • Add salt and pepper
  • Add in broth and water
  • Cover and bring to a light boil
  • Add kale, cover and allow to cook for 10 minutes
  • Add in drained and rinsed beans
  • Add in remaining seasoning
  • Cover and simmer for at least 10 minutes
