Kale Bean Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 1/2 cup carrots chopped
  • 1/2 cup celery sliced
  • 48 oz chicken or vegetable broth
  • 3 cups water
  • 6 cups kale rough chop
  • 2 cans cannellini beans drained and rinsed
  • 1/2 tbsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • salt and pepper

Method
 

  1. Heat large pot over medium high heat
  2. Add oil and onions and cook for 3-4 minutes
  3. Add carrots and celery to the pot and cook for 3-4 minutes
  4. Add salt and pepper
  5. Add in broth and water
  6. Cover and bring to a light boil
  7. Add kale, cover and allow to cook for 10 minutes
  8. Add in drained and rinsed beans
  9. Add in remaining seasoning
  10. Cover and simmer for at least 10 minutes
