Vegetable Egg Frittata

Ingredients
  

  • 1 Gluten Free pie crust
  • 1 tbsp olive oil
  • 2 cups vegetables chopped
  • 6 eggs
  • 1/2 cup milk or non-dairy milk
  • 1 cup shredded cheddar cheese
  • salt & pepper to taste

Method
 

  1. Heat oven to 350 degrees
  2. Heat small skillet over medium high heat
  3. Add olive oil to skillet
  4. Add chopped vegetables to the skillet and season with salt and pepper
  5. Cook vegetables for 5 minutes, stirring frequenctly
  6. In a bowl combine eggs, milk, cheese, and salt and pepper
  7. Once vegetables are cooked add them to the egg mixture, stir to combine
  8. Pour egg and vegetable mixture into the pie crust
  9. Bake for 35-40 minutes
  10. Allow to cool for 5 minutes and serve
