One of my favorite Gluten Free Bloggers is Jenny from Gluten Free Birmingham! She has a daughter with Celiac and does a great job of posting recipes and GF product deals.
A little while ago she posted this recipe for Angel Food Cake. I love angel food cake but have never made it before (even in my Gluten eating life).
I decided to cut the recipe in half and make cupcakes instead of a traditional bunt cake shape. It made about 18 cupcakes. They only took 15 minutes to cook as cupcakes. Make sure you vary your cooking time based on what you cook them in. Make sure you sift everything as instructed!
The recipe is super simple and came out great! Using pre-mixed GF flours like Pamela’s is a real time saver for me!
The Gluten loving hubby downed them! I think they would go great with some fresh fruit and whip cream.
