Today marks one year from my official diagnosis of Celiac Disease! It has been a crazy and full year!
Highlights from the past year:
– Totally Gluten Free!
– Had a Gluten Free pregnancy with TWINS!
– Attended my first Gluten Free Expo
– Weight loss pre-pregnancy and post-delivery
– Being a part of a wonderful Gluten Free community!
The decision to go Gluten Free was easy – Dr. said it would make me feel better. However the process of learning to be Gluten Free is a very long road that I feel that after a year I’m just starting down.
When I first cut Gluten out of my diet it took all of a week for me to start feeling better, after two weeks I was convinced that a Gluten Free lifestyle was the answer. I am proud to say I haven’t “cheated” in the past year, but I have had a handful of “Glutened” experiences where I unknowingly ate Gluten. It is amazing that the longer I go without Gluten the more sensitive I get to it.
What I miss most:
– The ease of ordering a pizza
– The ability to order anything off a menu
– Fried food
What I look forward to:
– Continuing to feel good
– Learning more about what I can eat and discovering new recipes
– Finding more Gluten Free pizza restaurants!
