Another fun filled week in our home! With July 4th falling on a Wednesday we were treated to a family day in the middle of the week! We loaded up the kids and enjoyed a cookout at the hubby’s brothers house. I brought potato salad and chocolate chess pie. Both were big hits!
I have been working on getting the toddler to eat more veggies. My latest attempt was to make chicken stir fry but instead of frozen veggies I grated fresh zucchini, squash and carrots. She ate a big bowl of it! Mom wins!
Friday night the hubby and I escaped for a date! We went to Chili’s for dinner. Here is there Gluten Free menu. I had the Margarita Chicken without tortillas strips, loaded mashed potatoes and steamed broccoli. Always know that eating at restaurants as a Celiac is a risk. Cross contamination can be a big issue. I have eaten at Chili’s a couple times since going Gluten Free and have gotten Glutened once. So always be careful, ask lots of questions and know it could go south.
Before heading home we picked up some ice cream from a local ice cream shop.
Here is a fun and tasty recipe I have made twice this week! Brown sugar and bacon and veggies…. yummmmm!
