My Gluten Free Week

Admittedly I’m behind this week.  It’s Sunday night and I have no idea what we are eating this coming week.  Total mom fail!  I’m sure everyone will get fed I’m just not sure what at this point.  Promise I don’t have it together most of the time. 

We have had a fun week and I wanted to share some photos with you all.  If you follow me on Instagram you’ve seen all these pictures.  Sorry. 

With our crazy work schedule Monday is the only day where I’m home all day with the kids and the hubby is home for dinner.  So I made slow cooker pork loin with a balsamic, brown sugar glaze.  Sounds fancy but it is so good and so easy!


The toddler wanted to make chocolate chip cookies so we whipped up a batch while the twins were napping.  So good and Gluten Free!

Wednesday morning the twins and I ran errands in Durham so we were able to hit Trader Joe’s.  The end caps for the cash registeres had three different kind of Gluten Free cookies.  These were the only ones  I hadn’t tried before.  Umm… awesome!  Chewy, sweet goodness.  The only sad part is the box only has 12 cookies.  They are Gluten Free and free of all 8 common allergens!  Buy them. 



Thursday night I made Beef Stroganoff.  The kids ate it up!  We went right to the bath tub after dinner. For all those without kids, if the dinner is good it will end up all over your children which equals bath night.  As a mom I count this as a win, full belly’s and clean bodies!


After a long run Friday morning I was starving.  I had failed to eat anything before my run – I know!  So when I got home I made this big, beautiful breakfast of Trader Joe’s GF waffles and two scrambled eggs.  I ate every crumb.  Next time I’ll make sure I eat something before I run.

Back to our crazy schedule, Friday afternoon and Saturday are our “off” days since Sunday is a work day for Pastor hubby.  Saturday morning was chilly but we were all getting stir crazy so we bundled up and went for a walk.  The hubby took this picture of the kids and me walking at a park.  It warms my heart!

By dinner time it had warmed up so I sent hubby outside to the grill.  This dinner looks basic and simple but it was one of the best meals we’ve had in months.  The chicken was tender and juicy!  I cooked the fresh green beans in onions and bacon low and slow.   The sides of GF mac-n-cheese and sweet potato fries just took the meal to the next level.  The white wine cocktail didn’t hurt anything either! Don’t tell anyone but I had more than two helpings.
