Ranch Cauliflower Quinoa Bites

Oh quinoa how I’ve missed you!  Do you go through phases with your eating?  I do.  There will be certain foods that I eat a lot of for a while then I completely stop eating them.  For me that has been quinoa.  It has been at least nine months since I’ve cooked with it.  I found a bag of quinoa in my pantry yesterday and decided it was time for us to spend some time together!  


I’ve also been wanting to make more healthy snacks for the kiddos to munch on.  Raisins, dried fruit and veggie chips are good but I want something with more protein in it.  So yesterday I made Quinoa Pizza Treats and Ranch Cauliflower Quinoa Bites for the kids (and me) to enjoy!  I added the cauliflower because I had some left over from the Cauliflower Cheese Sticks and I love to hide veggies in food for the kids!  It’s like a game for me!

What You Need:
1/2 a head of cauliflower grated
1 cup of cooked quinoa
3 tbsp ranch dressing
2 tbsp bacon bits
2 eggs
1/2 cup shredded cheddar cheese
Salt and pepper


How To Make It:
Heat oven to 350 degrees. Microwave grated cauliflower for 5 minutes to make it soft.  Let cool for a few minutes.  Mix all the ingredients together in a bowl.  Grease a mini-muffin tin.  Fill tins with mixture.  Bake for 15-18 minutes.  Makes 22 mini muffins. 


These were super tasty and a hit with two of the three kids!  I even took some to a girls night out with some of my friends and they loved them!  They had never had quinoa before and were amazed that these tasted so good!
