Pamela’s Microwave Brownie Mix

Chocolate is a weakness of mine.  Recently during a grocery shopping trip I spotted a new Gluten Free chocolate treat I had to have!  It is a single serve Gluten Free brownie mix from Pamela’s Products.  


The instructions were super simple and all you need is the packet, oil and water.  It even cooks up in just a minute to sooth your chocolate fix!  The mix is also dairy free.


I thought that flavor was good and very chocolately.  I do have to say the texture wasn’t that great.  It was’t very moist and fell apart easily.  I have made Pamela’s regular brownie mix before and felt the texture was fine.  It seems like the mix needs an egg or something.


Overall it solved my chocolate fix but I may experiment next time and add an egg.

Anyone have an idea to fix the moist issue?  I have one more packet left to try.

    I do agree it’s more like the microwaveable chocolate cakes than a brownie…I find the texture doesn’t matter nearly as much with a small scoop of vanilla on top though šŸ™‚

    I got two of these at the gluten free expo last weekend but haven’t tried them yet. I am anxious to hear how it works with an egg. Also, did you just use a coffee mug? or something a little bigger. And I do like the scoop of ice cream idea. that fixes most everything!

      I used a large coffee mug. But a regular coffee mug should be fine. Enjoy!

    When I make these, I use a small cereal bowl rather than a mug to allow the batter to spread out and be thinner. Maybe that makes a difference? I usually microwave for 75 seconds and the texture is good for me–perfect chocolate fix. I find these at my local Target!!

    Oh, now this sounds dangerous! Maybe next time, just don’t cook it as long? Perhaps your microwave wattage is higher than they are assuming on the package. If I overcook brownies, that’s what makes them dry.

    I had the same issue too. I had sepme whipped cream left over so added it and it tastes delicious! Try it, it would surprise you. šŸ™‚
