In a perfect world my house would be filled with fresh fruit and vegetables from the farmer’s market. My pantry and fridge would be stocked with products from the local co-op. I would make earth shattering meals every night that my family would love. And money would fall from the sky!
Now back to reality there are things called budgets, bills and paychecks. Sometimes the three do not align correctly and we have “a eat whatever is in the house to make it till payday” kind of week. Anyone else want to admit to this fun adventure?!
This week happens to be one of those fun weeks. The meals have all been good and well received but they haven’t been fabulous.
So to be honest, I made dinner out of cans and boxes last night. Don’t judge this is not the norm. But this is real life here.
Here is how it went down. I cooked up some rice from a box. Then I combined can chicken breast, ro-tel and Progresso’s Chicken Enchilada soup in a skillet. Once the chicken, cheese mixture was heated we ate it over the rice. We also used tortillas chips to dip with. Was this dinner awesome? No. Did it feed the family? Yes.
So there is the truth – sometimes dinner comes from a can!
