In my humble opinion pork is always best accompanied by more pork! Anytime I can find a way to combine pork with bacon I call it a win. We had some leftover roast pork from this recipe that I wanted to incorporate into a meal. After doing some searching I found a recipe that mixed pork, pork, potatoes, cheese and BBQ sauce. I knew it was going to be a winner.
So this is how I created Gluten Free Potato BBQ Pork Casserole!
What You Need:
For potatoes
Instant Potatoes – follow directions on box for 6-7 servings
2 2/3 cups water
4 tbsp butter
1 cup milk
2 cups of instant potatoes
1/2 cup of shredded cheddar cheese
2 oz cream cheese
4 oz sour cream
Salt & Pepper
Topping
2 cups of shredded BBQ pork
1/3 cup of GF BBQ Sauce
4 slices of cooked bacon, chopped
1/4 cup of shredded cheddar cheese
How To Make It:
Heat oven to 350 degrees. Follow the directions on the instant potatoes box. Boil water with butter. Then remove from heat and add milk, and potato flakes. Mix in 1/2 cup cheese, cream cheese, sour cream and seasoning to taste. Pour into a casserole dish. Top with pork, BBQ sauce, bacon and cheese. Bake uncovered for 25 minutes.

This dish tasted and smelled amazing! It was also very good reheated the next day for lunch. By using instant potatoes this wasn’t a firm casserole. You could use mashed potatoes from fresh boiled potatoes if that is the texture you are going for.
Pork with pork is always a winner in our house!
