Lunch is a crazy meal for us. I’ve been at it since 5am or earlier, I’ve worked, I have the kids and now we all need food. Mentally I’m not up for cooking much so I need easy go to foods that we all can eat. One of our recent favorites has been quesadillias. I can customize them based on each of our likes, they are fast and easy! Win-win for this mom!
One of my recent creations is this beauty!
She doesn’t have a fancy name or fun bells and whistles. But she was super tasty and it took me 7.5 minutes to make her and about 3.5 minutes to devour her!
What You Need:
2 GF tortillas – I used Toufayan
Handful of shredded cheddar cheese
Handful of fresh spinach
2 cooked GF chicken tenders – I used Perdue
Dips: sour cream, salsa, or guacamole
How to Make It:
Heat a skillet over medium-high heat. Cook the chicken tenders per the microwave instructions. When cooked chop into bite sized pieces. Place one tortilla on the hot skillet then layer the cheese, spinach and chicken. Cover with the second tortilla. Heat on each side for 3-4 minutes. Slide onto a plate, cut up and eat!
Feel free to modify her according to have you have in your fridge.
