Wow, did we have a big week! It included 5 inches of snow and ice, which shut everything down for two days. In NC we don’t handle snow well. The snow cancelled my work trip so I was here for all the family snow fun.
The snow pushed all the wedding stuff back so we ended up having the wedding rehearsal and wedding on Friday. I was so proud of my sweet hubby, he did a fabulous job officiating the wedding! It was so wonderful to see our friends get married and to be a part of it!
Saturday was a blur with me working (making up from the snow), a kid party and snow.
Sunday after church and nap, I took the kids to Trader Joe’s and our favorite Asian restaurant, Twisted Noodles.
Little B threw a fit in the middle of Trader Joe’s and just sat down. This is typical behavior for two year-olds by the way. They learned it from me, I too throw fits when I don’t get my way and just roll around on the ground š One of the kind workers at the store decided the kids needed stickers, which helped us get through the rest of the store! Epic finds: Gluten Free Chocolate Cupcakes and GF rolled oats!
Monday – GF pasta with red sauce and veggies
Tuesday – Sauteed chicken tenders with tater totes and veggies
Wednesday – Beef Lo Mein – One dish meal (didn’t make it last week)
Thursday – Chicken and Creamy spinach – recipe from eMeals
Friday – Breakfast for dinner, pancakes and eggs
Saturday – Curly’s 5th birthday party! We are having a GF mac n cheese bar!

Hello! I just wanted to thank you for this awesome website! I’m a fellow North Carolinian so I get the snow struggle š We just can’t handle it here! Every one runs out to get their (gluten free) bread, eggs, and milk when they hear the word “snow.”
I don’t have Celiac Disease but I have been told (wrongly) by several doctors that I have some sort of autoimmune disease, but the blood work never quite matches up. I went gluten free in October of 2013 and I have never felt better! But anyway, I love the site and all of your wonderful finds, recipes, etc!
