Do you juice? If so, what do you do with the leftover pulp? I hate throwing it away, it seems like such a waste! For the past few weeks I’ve been turning the pulp into muffins.
This has been a huge success with the kiddos. I have them help through the whole process; they help me make the juice and the muffins. This gives them great pride and they will not only eat the muffins but also drink the juice! Huge success! I just smile as they eat muffins filled with veggies.
What You Need:
Dry ingredients
1 cup GF all purpose flour blend
3/4 cup brown sugar
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
pinch salt
Wet ingredients
2 eggs
1/3 cup vegetable oil, apple sauce or coconut oil
1 tsp GF vanilla extract
3 tbsp fresh juice
1 1/2 cups of juice pulp
How To Make It:
Heat oven to 350 degrees. Combine dry ingredients in one bowl and wet in a second bowl. Pour the wet ingredients into the dry bowl and stir. Scoop into a lined muffin tin. Bake for 15-18 minutes.
Feel free to mix these up and add nuts, chocolate or raisins. These do not last long in our house!
