Weekly Menu May 19 2014

Epic.  That is the only word I can use to describe my trip to Miami.  It was my first trip to this wonderful city and I was blown away!  The food, the people and the city were all epic.  I will try and share with you soon about the amazing Gluten Free food I devoured during my trip.

This week we are back to life of work, kid’s activities and family fun.

I also want to share that the smoothie and veggie adventure is going very well for hubby and me.  We have both dropped some weight and are making better eating choices.  This means meals this week will be filled with simple meat and loads of veggies.  Our breakfasts and lunches will be smoothies.

Monday – Chicken Cutlets with Balsamic Pan Sauce – Recipe from Emeals

Tuesday – Pizza made with Cauliflower crust

Wednesday – Pan seared chicken with sauteed veggies in an olive oil and lemon herb sauce

Thursday – Leftovers – I have a work event

Friday – Quinoa Stir Fry loaded with fresh veggies

Saturday –  Grilled steak served with grilled veggies
