In May I was blessed to get a load of Gluten Free Mama baking mixes to try. We have been working our way through some of them and I wanted to share our progress.
We started with the pancake mix and followed the directions on the bag to make waffles. The secret is to separate the eggs and whisk the egg whites until peaks form. Then you fold them into the batter. That is what makes the waffles so fluffy! The texture and flavor were fabulous. We even froze some and have enjoyed them later with great success.
This past weekend we tried out the cookie mix.
The kiddos helped me prepare the mix and even cut out the cute heart shapes.
The cookies had a very good flavor! We took the cookies to a wedding and almost all of them were gone. I saw some Gluten Free kiddos with them in their hands. I call that a success!
