Southwest Chicken Skillet

Looking for an easy and fast dinner to feed your Gluten Free family?  This is a one dish meal that will please all the kiddos and adults in your house.  This recipe has so many possibilities.  You can make it super easy and use pre-cooked chicken and can foods or you can make is a little harder using fresh chicken and fresh vegetables.

This recipe is so easy I have used it in cooking demos where all I had was an electric wok, a can opener and a spoon.  You can make this meal in under 20 minutes and under $10 total!

First we will start with the easy way to prepare the dish and then the harder way.  Feel free to customize this recipe to fit your family’s tastes.

Easy Way

What You Need:

2 tbsp vegetable oil

1 can of whole kernel corn, drained

1 can black beans, rinsed and drained

1 can diced tomatoes

1.5 cups of cooked rice

1 cup cooked chicken

Salt grinder

Pepper grinder

1 tbsp GF taco seasoning

1 cups of shredded cheddar cheese

1 green onions, chopped

 

How to Make it:

Heat skillet over medium heat, add oil, corn (drained), beans (drained), tomatoes, rice, seasoning and 1 cup cooked chicken. Stir, bring to a boil and reduce to low heat, cover and cook for 10 minutes. Serve with cheese, onions, salsa, sour cream, guacamole or cilantro.

 

Southwest Chicken Skillet 2

Harder Way

What You Need:

1 lb chicken tenders

2 tbsp vegetable oil

1 can of whole kernel corn, drained

1 can black beans, rinsed and drained

3 tomatoes, skinned and chopped

1.5 cups of cooked rice

Salt grinder

Pepper grinder

1 tbsp GF taco seasoning

1 cups of shredded cheddar cheese

1 green onions, chopped

 

How to Make it:

Heat skillet over medium high heat with oil. Season both sides of the chicken tenders with salt and pepper. When oil makes waves, add the chicken to the skillet. Do not move the chicken for 3 minutes, you can cover if needed. Then flip the chicken and cook for 2-3 minutes. When cooked remove chicken from the skillet and let cool.

Reduce the heat in the skillet to medium heat. Add in the corn, beans, tomatoes, spices and rice. Cook covered for 10 minutes. Add cut up chicken and combine.

Serve with cheese, onions, sour cream, cilantro or guacamole.

 

This recipe can fit the bill in any household.
