Honey Chicken Skillet #glutenfree

It’s time to clear the air about something, I am not a perfect mom.  Mater of fact I’m not a perfect wife, friend, daughter, sister….

Why do I bring this up, you ask?  Well because life happens and my best plans go array.  Yes, I make a weekly Gluten Free menu plan but some days I just totally forget to look at it.  One day last week I was supposed to make Chicken with White Sauce in the slow cooker.  This is a super easy meal to prepare but I totally forgot to put it together before work.  By the time I got home with the kiddos it was 4pm and nothing was ready to eat.  Curly, mentioned see wanted the “sweet chicken” for dinner.  This means Honey Slow Cooker Chicken, a difficult task to complete when there was nothing in the slow cooker.

While the kids were playing I decided to wing it.  The finished product was restaurant quality and it only took me 20 minutes to make.   The kids loved it and the leftovers were great the next day for lunch.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Serving Size: 4

Simple Gluten Free dinner!

Ingredients

  • What You Need:
  • 2 tbsp oil
  • 4 chicken breasts, thin
  • Salt and pepper
  • 1/4 cup carrots, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell peppers, thinly sliced
  • Sauce:
  • 1/2 cup of honey
  • 2 tbsp GF soy sauce
  • 1 tbsp minced onion
  • 2 tbsp ketchup
  • 1 tbsp oil
  • 1/2 tsp garlic powder

Instructions

  1. Heat a large skillet over medium high heat. Season both sides of the chicken with salt and pepper. Add the oil to the hot skillet. Then add the chicken and pan sear for 4-6 minutes on each side. You can use a cover is the oil starts to splatter. Do not move the chicken around, only move it when it is time to flip it. When the chicken is done remove it from the skillet.
  2. In a bowl, whisk all the sauce ingredients together.
  3. Add the vegetables and sauce to the skillet over medium heat. Stir and let cook for 5 minutes.
  4. Serve with rice.

Honey Chicken

This last minute meal will be a regular part of our menus from now on!  So my failure to prepare actually turned out ok, this time!
