This is hubby’s all time favorite meal. I cook it for him on his birthday and as often as I can besides that. I first created this recipe for my Freezer Meal Recipes but have since converted it to a skillet meal. We do enjoy it in the slow cooker but prefer the skillet method the best.
As always this meal is super simple, super fast, Gluten Free and family friendly! You can use all fresh ingredients if they are in season or you can use store bought frozen vegetables if needed. This recipe is also very customizable to your family’s tastes and what you have on hand. I make it a little different each time based on the veggies I have in the house.
When dinner starts with fresh ingredients like these, you know it is going to be good!
To be honest I’m not a huge sausage fan, so I lean toward chicken sausage that is all natural and organic. I have found a few brands that fit this mold and taste great.
Ingredients
- 3 tbsp oil, divided
- 1 onion, chopped
- 1 tsp minced garlic
- 3 peppers, cut up
- 2 large tomatoes or 4 small, chopped
- 3 mushrooms, chopped
- Salt and pepper
- Oregano, fresh or dried
- GF all spice blend to taste
- 4 GF Chicken Sausages, sliced
- 1 box of GF pasta
Instructions
- Boil water and cook pasta according to the directions.
- Heat a large skillet over medium heat and add 2 tbsp of oil. Then add in the onions and garlic. Stir and cook for 3 minutes. Add in the rest of the veggies and seasoning. Cover and cook for 15 minutes.
- In a small skillet heat 1 tbsp of oil over medium-high heat. Cook the chicken sausage for 5 minutes.
- Top your pasta with the pepper mixture and the sausage.
