Disney World is truly a magical place! Not only can you see all the characters, ride fun rides but you can also eat your Gluten Free heart out. Our family spent a week in Disney the first week of February and were in heaven! We were able to visit three of the four parks and had a blast.
We played in Epcot for one day. The kiddos loved the Nemo ride and the boat rides in the Land and in Mexico. There were so many tasty options to choose from for our family.
We had a snack at Sunshine Seasons in the Land. It is a cafeteria style restaurant that have different areas featuring different foods. The grill had a ton of safe Gluten Free options and they had this AMAZING display of Gluten Free and Allergy friendly snacks. Hats off to Enjoy Life Foods for that!
For dinner we went to San Angel Inn Restaurante in Mexico. It is the restaurant inside the Pyramid and over looks the boat ride. It was super dark so the food pics are rough. However the menu is awesome and clearly marks what items are Gluten Free. When we sat down we asked to speak to the Chef. He came right out and told us all about how they prepare the food and what he recommends. He also said the tortillas chips were Gluten Free!
We ordered the kiddos cheese quesadillas in corn tortillas with rice. For the three adults we decided to order three dishes and share. We ordered the: Tostadas de Tinga, Pollo a las Rajas, and the Enchiladas Verdes Con Pollo. We all agreed the tostadas were the star of the meal. Three come on a plate and I could have eaten two plates full!
The great thing about Epcot is you can walk through all the countries and get really authentic food and drinks. It is great to see some of the treats I loved as a child in Germany and England. Now as an adult you can drink your way through the countries. I was surprised by how much alcohol was available and how many different types. If the kiddos were not in tow we could have drank our way through Epcot.

Are the frozen margaritas or on the rocks at the outdoor locations in Mexico gluten free ?

I had one on the rocks and it was yummy and safe. Just ask the staff if you are concerned. They are very knowledgeable.
