How was your Easter weekend? I hope your family is super supportive and had loads of safe food available for you. Support makes all the difference. We had a wonderful couple days spending time as a family: riding bikes, having egg hunts, playing and more riding bikes.
The kiddos have spring break this week so they are out of school. Hubby, MIL and I are all working together to watch the kiddos and attempt to control the chaos as we juggle our work schedules around.
Dinners will be fun and slightly larger as the MIL is here with us.
Monday: Chicken Parmesan with GF noodles and spinach salad
Tuesday: Honey Mustard Pork Chops with roasted veggies and cauliflower rice (use this marinade then grill)
Wednesday: Slow Cooker Beef Roast made with homemade Cream of Mushroom Soup, sides of carrots and potatoes
Thursday: Ground Beef Enchiladas with rice and beans
Friday: Baked Ziti with GF cheese bread and a salad
Saturday: Leftovers or dinner out
