Gluten Free Weekly Menu June 8 2015

Hey Friends!  Hope you had an enjoyable weekend with some tasty food.  Our weekend adventure started Friday when our air conditioner stopped.  We then found out at 5:30pm what was wrong.  Good news- it is covered under warranty.  Bad news – can’t get parts until Monday.  That means we spent as much time as possible not in the house.  That included a dinner party that was supposed to be at our house Saturday that we relocated to a friend’s house.  It did include this tasty Gluten Free Cheesecake!

This week will include simple dinners, made with basic ingredients.

Monday:   Dinner out at local Mexican Restaurant

Tuesday:  Veggie Pasta Bake 

Wednesday: Beef and Broccoli – Recipe from eMeals

Thursday: Parmesan Pork Chops

Friday: Crock Pot Carnitas 

Saturday: Family dinner for a birthday celebration

    what do you order at the Mexican restaurant? I order Fajitas and I don’t eat the tortillas. I. Just put all the stuff together and make a fajita salad. Jut wondered what you did.

      Penny – My go to options are chicken fajitas with corn tortillas instead of flour, enchiladas, or ACP (the cheese, rice and chicken dish). The chips can be tricky due to cross contamination in the oil. I know which places in town are safe.
      I can also speak enough Spanish to make a fool of myself but still get the point across.
