Hello Friends! Anyone know where June went? Holy cow – time is flying.
We had a great weekend with some family time. One food highlight were brownie sundaes Sunday night. The kiddos went nuts over these. But really who doesn’t love a warm gooey brownie toped with ice cream, fudge and strawberries?
I used the Aldi brand LiveGFree box mix for the brownies. It isn’t my absolute favorite mix but it is good and the cost is great.
Everyone is home this week, which makes life easier. This coming weekend will be filled with family time, July 4th festivals, cook outs, and fun times with cousins.

Monday: Spaghetti with meat and veggie sauce
Tuesday: Grilled Pork Chops with a honey mustard marinade
Wednesday: Mexican Slow Cooker Chili
Thursday: Baked Ranch Chicken with tater tots – recipe coming soon

Hey Pam! I was diagnosed with Celiac disease 2 years ago. Unfortunately my mama suffered for over 15 years with this horrible disease. I just read your blog about junk food and want to say “amen sista”! I am so tired of trying to cook healthy and be very careful when eating out but my family is so awful! My husband complains about eating cardboard and my grown children have no patience. So often I just eat a salad with oil and vinegar, but that gets old quick and is not always safe. Thanks for being real! People have no idea how hard and limiting this is so these products help. I try to make healthy choices most of the time, but to never eat an Oreo cookie again is depressing. People need to be tolerant and supportive, it helps a lot. At my school functions I always thank the hosts and walk away with an apple if I’m lucky. I’m not complaining, just sharing a daily experience. I guess I’m most disappointed in the lack of support from my husband who is very verbal about how much of an “inconvenience ” this is for him. Your blog and wonderful recipes help so much! Keep sharing the love.

My heart breaks for you. I’m so sorry you do not get the support you need and deserve at home! To be honest my first thoughts to help your family understand what your life is like, are not nice… laxatives 😉 But on a serious note, I hope that over time they understand how much better you feel now and that is more important of the convenience of “regular food”. I understand the Oreo desire. I have found Trader Joes and Glutino brands to be pretty tasty!
Keep making Gluten Free food and feeling better! I pray one day your family gets it.
