Time to talk Gluten Free menu planning! We are in full swing of work, school and now kid after school activities. So a plan is the only thing that will help keep me on track. We have already hit the grocery store for the week and I spend about 30 minutes chopping veggies today to be prepared for the week.
How was your weekend? We had a backyard camp out complete with dinner cooked on the fire, s’mores and breakfast burritos made on the campfire. The kids loved it and to my complete disbelief all 5 of us slept in the tent all night long. I would have put money that I’d be back in my comfy bed by 10pm at the latest! Turns out the kids enjoyed it and want to do it again.
For our campfire dinner I made hobo packs and we grilled hot dogs. A hobo pack is meat, vegetables, seasoning and butter wrapped in foil and placed by the fire. Depending on how hot your coals are you can cook them in 30-45 minutes. We made ours with chicken tenders, potatoes, onions, carrots and zucchini. Super good!
