Hope you had a great Thanksgiving with family and awesome Gluten Free food! We had a fun time on our vacation Thanksgiving with my side of the family. Plan A was to find a local restaurant with GF options and enjoy our Thanksgiving meal there. I called 8, yes 8, restaurants in the area that had GF menus and none of them were going to be open on Thanksgiving. I found this out on Wednesday, the day before Thanksgiving. So Plan B was created and implemented. Once we got to the beach we went to Whole Foods and loaded up on goodies. Here is the final plate:
Turkey, ham, stuffing, green bean casserole, cornbread, mac n cheese, roasted veggies, mashed potatoes and pies. All items were Gluten Free! This was a combination of pre-made items from Whole Foods and products we made. Plan B was fabulous and left us with some tasty leftovers that we enjoyed for the rest of our vacation. Anyone else have to go with a Plan B for Thanksgiving?
Our week will be normal juggling school, work, church, and family. My plan is to roast a chicken Monday in the slow cooker so will have chicken for multiple meals through the week.

Thursday: Baked Chicken Fajitas
Friday: Leftover Stir Fry
Saturday: Dinner at Family’s house
