It’s the holiday season, which means time to make COOKIES! Growing up cookies were such a huge part of our family Christmas celebrations. My Grandma would have jars and jars of cookies all over her house. These days I still make a ton of cookies around Christmas, they are all just Gluten Free.
Many cookie recipes take a ton of ingredients, a ton of time and a ton of effort. There is a time and place for those cookies, but sometimes you need a simple recipe you can throw together quickly so you have a dessert when guests arrive or that you can take to a party.
This recipe only takes 4 ingredients, yes 4. And it takes 24 minutes from start to cookies coming out of the oven. These cookies may be simple but they will wow a crowd. I made these for dinner guests and they thought they rocked!
For this recipe I used Glutino Pretzel sticks. They taste great and have a great crunch so they are the perfect texture for these cookies.
Ingredients
- 1 cup peanut butter
- 1 cup white sugar
- 1 egg
- 1 cup crushed Glutino pretzels
Instructions
- Heat oven to 350 degrees.
- Stir together the peanut butter, sugar, and egg.
- Put the Glutino pretzels in a plastic bag and crust with a rolling pin. Place crusted pretzels in a shallow bowl.
- Roll the dough into a ball and coat with crushed pretzels.
- Place cookies on a parchment paper covered baking sheet.
- Take a fork and make an X on the top of each cookie to flatten them.
- Bake for 11-12 minutes.
- Allow to cool and enjoy!
- Makes 12-14 cookies
