How was your Christmas? Did you have fun with family? Any crazy uncle stories? How about the food? Everyone make it through the holiday with safe Gluten Free food?
We have had some fun filled days. We had big Christmas celebrations Friday with Hubby’s side of the family. The kiddos are overrun with toys. Our Gluten Free Christmas menu included: green bean casserole, corn casserole, sausage balls, christmas crack, pecan pie and pumpkin pie. I ate way too much.
Saturday and Sunday were Christmas celebration free so we took the kiddos on an adventure. We headed to Charlotte, NC for yummy food, shopping and puppy picking! The food highlights were pizza from Fuel Pizza and crepes from Crispy Crepe. We also picked an adorable female golden retriever puppy to join our family. She will get to come home in 3 weeks. It has been about 3 years since we lost our last golden so we are ready for the chaos again.
This week is New Year’s and Christmas with my side of the family. This means more yummy Gluten Free cooking, presents and family fun.
Here is my plan of attack for dinner this week.

Monday: Parmesan Pork Chops
Tuesday: Beef Lo Mein
Wednesday: Dr. Pepper Roast Pork – slow cooker
Thursday: Enchilada Casserole
