Slow Cooker Pork Loin with Veggies

School has started and life is officially crazy. There is barely time to sleep, eat, clean, work and get the kids to school and activities. This is when I pull out the slow cooker and let it do all the work. Ain’t nobody got time to cook! I try to use the slow cooker at least once a week to help control the chaos. And many of the leftovers can be re-purposed for lunches and dinners the rest of the week. Whenever I can cook once and get more than one meal out of it, it’s a win.

This is a simple one dish meal that you can throw in the slow cooker in the morning before you head out for the day and when you come home – dinner! Literally all you have to do is take the goodness out of the slow cooker and put it on your plate.

Slow Cooker Pork Loin with Veggies

Ingredients

  • 2 tbsp olive oil
  • 1-2 lb Pork loin
  • 1 lb potatoes, cubed
  • 2 cups baby carrots
  • 1 onion, sliced
  • 2 tbsp GF soy sauce
  • 1 tbsp brown sugar
  • 1 cup GF vegetable stock
  • Salt and pepper
  • Minced garlic

Instructions

  1. Heat oil in a non-stick skillet over medium high heat.
  2. Season pork loin with salt and pepper on both sides.
  3. Sear pork loin in the hot skillet for 3 minutes on each side.
  4. In a slow cooker layer the onions, carrots and potatoes on the bottom.
  5. Place the pork loin on top.
  6. In a small bowl whisk together the soy sauce, brown sugar, garlic and stock.
  7. Pour over the pork and veggies.
  8. Cover and cook on low for 8 hours or on high for 4-5 hours.
  9. Garnish with fresh herbs and enjoy!

The ingredients for this recipe are super easy and pantry staples. This recipe takes less than 10 minutes to prep and get in the slow cooker which is a huge bonus at 6am! I take as many shortcuts as I can. I use red potatoes and don’t peel them. I also use baby carrots so I don’t have to peel them and there is no chopping involved. Feel free to take the extra steps to peel and chop if you have the time.

Perfect mid-week meal for your slow cooker

This dish makes the house smell amazing when you get home! After a long day, coming home to a house that smells like dinner is a huge reward. Especially when you did all the work hours ago.

When is comes to slow cookers I prefer those that you can program. They will cook for the time you set and then keep the food warm until you are ready to eat. The slow cookers with the simple controls of on, low, high, off can get you in trouble if your timing isn’t right. We actually have 4 slow cookers in our house in 3 different sizes. My current favorite is this slow cooker. It is programable, holds a ton of food and is easy to transport if needed.

Another slow cooker tip is to use liners. There are a few options out there, but I use the Reynolds brand liners. When you are cleaning up all you have to do is remove the liner and through it away. There is no need to clean the slow cooker.

The leftovers from this pork loin are perfect for these BBQ pork quesadillas.
