Time to plan another week’s worth of Gluten Free dinners.
Hey guys! Do anything fun over the long weekend? We loaded up the car and drove up to the North Carolina mountains. We are so blessed that we can be in the mountains or the beach in less than 3 hours. This makes quick trips super easy.
Our adventure included mining for gems, apple picking, playgrounds, swimming and hiking.
The food highlights came from Las Salsa in Marion and Bistro 127 in Hickory. The Mexican food at Las Salsas was amazing and there was a ton of it. Bistro 127 gets what it means to feed a Celiac. We enjoyed fried zucchini chips, chicken tenders, fries, pizza, pasta and a chocolate torte. I love dedicated fryers and will order anything that I can that will be cooked in them.
This week will be crazy busy so I will be reaching for my slow cooker to help us survive.

Monday: Vacation
Tuesday: Slow Cooker Pork Loin with Veggies
Wednesday: Crock Pot Beef Stroganoff – will adjust to make GF
Thursday: Dinner out
Friday: Grilled hot dogs, burgers and veggies
Saturday: Dinner out
