Welcome to October friends! Man, I love fall. It is my fav. Mostly because I love the sound of crunching leaves under my feet and I love to wear hoodies.
We had a great but busy weekend. I had a fabulous time at the Terra Vita Festival in Chapel Hill, NC. I was amazed at how many of the local chefs had prepared Gluten Free dishes for the event. I was able to eat way more than I expected. I also went out of my comfort zone and ate some food that I would normally shy away from – cow tongue, pickled habanero peppers and kimchi. My favorite dish was a lamb dish with pomegranate seeds, pickled cabbage and a white sauce.
This week we tackle life as usual so a dinner plan is necessary to survive the chaos.

Monday: Dinner Out
Tuesday: Taco Tuesday with homemade Guacamole
Wednesday: Scalloped Potatoes and Hamburger
Thursday: Lasagna
Friday: Honey Slow Cooker Chicken
Saturday: Leftovers
