Chocolate Snowflake Cookies

Need a quick dairy-free and gluten-free dessert? Chocolate snowflake cookies only have 4 ingredients and are super easy to make. 

We had some mid-week dinner guests coming over for dinner this week. Everything I cook is always gluten-free but one of our guests is also dairy-free. The menu was: salad, steamed broccoli and spaghetti. The issue was going to be dessert. After a full day at work I wouldn’t have time to make anything fancy or even have time to run to the store.

As I drove home I wracked my brain for something simple that I could make that everyone could enjoy. I remembered a recipe I created years ago for Lemon Cake Cookies. They were super simple and would fit all the food restrictions. Problem was I didn’t have yellow cake mix or lemons. What I did have was chocolate cake mix. With a few changes I made Chocolate Cake Mix Snowflake Cookies!

Snowflake Cookies

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 24 cookies

Ingredients

  • 1 box Gluten Free chocolate cake mix - Betty Crocker or LiveGFree
  • 1/4 cup of vegetable oil
  • 2 eggs
  • 1/2 cup of powdered sugar

Instructions

  1. Heat oven to 350 degrees.
  2. Cover 2 baking sheets with parchment paper
  3. In a bowl combine the cake mix, oil, and eggs.
  4. In a second bowl pour in the powdered sugar
  5. Once the dough is combined, use your hands to make 1 to 1 1/2" balls of dough
  6. Roll the dough in the powered sugar and place on the baking sheet
  7. Bake for 13-15 minutes
  8. Cool on a wire rack and enjoy

For this recipe I used the LiveGFree brand from Aldi of chocolate cake mix. This mix is the same as the Betty Crocker cake mix, just in a different box. If you use a different brand make sure you read the ingredients to confirm they are both gluten-free and dairy-free.

The cookies came out gooey and held up well once cooled down. They are slightly messy due to the powdered sugar, but so worth it!

These were a huge hit with the adults and kids. Our guests even took a bag of cookies home to enjoy later.

You could even add mini chocolate chips if you wanted to add a crunch to them. I suggest Enjoy Life Foods since they are top 8 free.
