Anyone else want to admit that they love Tik Tok? I spend way too much time watching videos about recipes, dogs and travel. There is a viral Tik Tok for a feta, tomato and pasta dish that I found a couple weeks ago. The video and recipe are from Feel Good Foodie.
There have sense been a ton of videos making the recipe with different variations. I have seen it made with ricotta cheese or goat cheese. I wanted to make my own gluten free version.
Jump right to RecipeSince this recipe is so popular it is crazy hard to find block feta cheese. I seriously had to go to 3 grocery stores before I found block feta cheese – 3!
I wanted to use a fun pasta shape for my gluten free version so I used Jovial bowtie pasta. The ingredients are only brown rice and water so it doesn’t hold up as well as gluten free pastas that have multiple types of grains in them. The next time I make it I will probably use a brown rice and quinoa pasta. The Jovial pasta tasted perfect, it just didn’t hold up as well as mixed pastas.
This recipe was AMAZING and a huge hit in our house. Hubby and I inhaled this dish. Honestly, it was better than I expected it to be. The block feta cheese melted perfectly and blended right in with the tomatoes and pasta. The dish had a creamy citrus flavor. I paired it with herb baked chicken to add some protein.
This also makes a ton of food. We had it for lunch and I packed 5 lunch containers with the rest. So I am all set for lunches this week! I love when I can cook 1 meal and it last for days.
I suggest using fresh and organic cherry tomatoes with this recipe. They are the perfect size and burst just enough to mix in well with the cheese.
How to make Gluten Free Feta Pasta
To start, heat your oven to 400 degrees. Take a 9×13 inch glass baking dish and spray it with cooking spray.
Rinse your tomatoes and place them in the baking dish. Cover them with olive oil and herbs. Using a spoon, move the tomatoes around so they are fully coated. Make a hole in the middle of the dish for the feta cheese. Drizzle olive oil on the cheese and season with salt, pepper, oregano, and basil. Then top with 2 grated garlic cloves. The original recipe says to add the garlic at the end but I like my garlic cooked through.
Place the dish in the 400 degree oven for 35 minutes.
While this cooks, boil your water and good your gluten free pasta per the instructions on the box. I normally cook mine for 2 less than the time on the box to get it al dente.
After 35 minutes pull the dish out and stir until the cheese is well mixed in. Once blended, pour in the gluten free cooked pasta. Gently stir it in to combine all the ingredients. Top with fresh basil and serve.
You can make this recipe crumbled feta but it will not be as creamy.
To make it a low carb version you can use zucchini noodles (zoodles) or cooked spaghetti squash.
Gluten Free Feta Pasta
Ingredients
- 2 pints organic cherry tomatoes
- 8 once block of feta cheese
- 2 cloves garlic grated
- 4 tbsp olive oil divided
- 1 tbsp basil dried
- 1 tbsp oregano dried
- salt & pepper
- 1 cub basil fresh
- 12 onces gluten free pasta
Instructions
- Heat oven to 400 degrees
- Grease a 9×12 baking dish
- Put tomatoes in the baking dish
- Cover tomatoes with 2 tbsp of olive oil and half the herbs, stir to coat
- Place block feta in the center of the tomatoes
- Drizzle olive oil and herbs on the cheese
- Season entire dish with salt and pepper
- Top with grated garlic cloves
- Bake for 35 Minutes
- Boil water and cook gluten free pasta per the boxes instructions
- Stir the tomatoes and cheese together until creamy
- Add in the gluten free pasta and genlty combine
- Cover with fresh basil and enjoy
