Breakfast Skillet

Ingredients
  

  • 2 tbsp butter
  • 4-5 potatoes, cubed
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 lb pork breakfast sausage
  • 6 eggs
  • salt & pepper
  • 1/2 tsp season salt

Instructions
 

  • Heat a skillet over medium heat
  • Add butter and allow to melt
  • Add potatoes and season salt, stir to coat
  • Cover skillet and let cook for 10 minutes.
  • Stir the potatoes half way through cooking
  • Remove potaotes from skillet and set aside
  • Add 1 tbsp of olive oil to the skillet
  • Add peppers and sausage
  • Allow sausage to brown and drain grease if needed
  • In a bowl stir and season the eggs
  • In the skillet push the cooked sausage and peppers to the side
  • Pour in the eggs and scramble them
  • Add in cooked potatoes and combine
  • Reduce heat to medium low and cook for 5 minutes
