On weekends, breakfast is a big deal in our house. One of our favorite dishes is Breakfast Skillet. It is basically all that is good about breakfast food all mixed together!
This dish is super easy to make and can feed a ton of people. Usually I can make this on the weekend and have leftovers for 1 or 2 days. When we have a group of teenagers to feed, I just double the recipe. Hubby has even made this in a cast iron skillet when camping!
Here is how you make it.
First, cube your potatoes. I’m lazy and don’t peel them first but by all means go ahead if you want to. To save time I use a chopper like this list one.
Next, heat up the skillet and add in the butter. Don’t let it burn but you want it to be melted. Then add in the potatoes, the butter should make a popping sound. Season the potatoes with season salt, salt and pepper. Stir to coat the potatoes. Cover the skillet and set the timer for 10 minutes. Half way through the cooking time, stir the potatoes.
Once the potatoes are cooked, remove them from the skillet, and set aside.
Add the cut up peppers and sausage to the skillet. You can add a little olive oil if needed. Break up the sausage and allow to brown. Drain the fat. I like my sausage a little crunchy so I let it cook on medium high the last few minutes.
When it comes to the sausage make sure you check the ingredients to ensure there isn’t any hiding gluten. Our favorite brands are Jimmy Dean and Neese’s.
In a bowl stir 6 eggs. Season to taste.
Push the sausage and peppers to one side of the skillet. Pour eggs on the other half. Scramble the eggs.
Once the eggs are cooked, add back in the cooked potatoes.
Combine all ingredients, reduce heat to medium low and cook for 5 minutes.
Add your topping of choice and serve!
Breakfast Skillet
Ingredients
- 2 tbsp butter
- 4-5 potatoes, cubed
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 lb pork breakfast sausage
- 6 eggs
- salt & pepper
- 1/2 tsp season salt
Instructions
- Heat a skillet over medium heat
- Add butter and allow to melt
- Add potatoes and season salt, stir to coat
- Cover skillet and let cook for 10 minutes.
- Stir the potatoes half way through cooking
- Remove potaotes from skillet and set aside
- Add 1 tbsp of olive oil to the skillet
- Add peppers and sausage
- Allow sausage to brown and drain grease if needed
- In a bowl stir and season the eggs
- In the skillet push the cooked sausage and peppers to the side
- Pour in the eggs and scramble them
- Add in cooked potatoes and combine
- Reduce heat to medium low and cook for 5 minutes
If you are doing meal prep, you can easily double this recipe to have even for breakfast all week.
This breakfast heats up really well in the microwave. I have even put it in a plastic cup and ate it driving to a client’s office. I know classy!

- Shredded cheddar cheese
- Hot Sauce
- Salsa
- Sour cream
- Avocado
- Pimento cheese
- Chives
- Bacon!
