Breakfast Skillet

Ingredients
  

  • 2 tbsp butter
  • 4-5 potatoes, cubed
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 lb pork breakfast sausage
  • 6 eggs
  • salt & pepper
  • 1/2 tsp season salt

Method
 

  1. Heat a skillet over medium heat
  2. Add butter and allow to melt
  3. Add potatoes and season salt, stir to coat
  4. Cover skillet and let cook for 10 minutes.
  5. Stir the potatoes half way through cooking
  6. Remove potaotes from skillet and set aside
  7. Add 1 tbsp of olive oil to the skillet
  8. Add peppers and sausage
  9. Allow sausage to brown and drain grease if needed
  10. In a bowl stir and season the eggs
  11. In the skillet push the cooked sausage and peppers to the side
  12. Pour in the eggs and scramble them
  13. Add in cooked potatoes and combine
  14. Reduce heat to medium low and cook for 5 minutes
