For my first Gluten Free baking adventure I decided to try Pamela’s Baking and Pancake mix. I bought the 24 oz bag at a local health food store with a coupon! My ultimate goal is to try the many different GF baking mixes and create my own once I know what I like. The main reason for this is cost – GF baking mixes can be pricey!
These came out amazing! I downed one as soon as it was out of the oven. I ate another one while the photos were uploading. These will make a tasty breakfast this week.

Hi thanks for the recipe! Unfortunately I noticed too late that you say “baking mix” in the ingredients list, but “baking flour” in the directions. There is a HUGE difference- baking mix already has sugar, baking soda, baking powder and salt! I think you must have used baking flour, but I bought and used baking mix. I noticed after I had added sugar but before adding baking soda and powder and salt. We’ll see how they turn out! (Probably extra sugary!)
Also, for future recipes, I would have liked to know approximately how many muffins this recipe makes.

Thank you for your comment. I hope your muffins came out wonderful! In the picture you can see that I used Pamela’s Baking and Pancake Mix for this recipe. These are a very sweet muffin. So if do you not like them as sweet just use regular GF flour instead of the Baking Mix.
I have changed the directions to say baking mix so there won’t be any confusion.
