I love Saturday mornings because I get to make breakfast with the Toddler! We usually make pancakes or eggs, but I decided to mix it up and make CORN pancakes. Some people call them Johnny Cakes.
What You Need:
– 1 cup Bob’s Red Mill GF Cornbread Mix
– 3/4 cup of milk
– 1 tbsp oil or applesauce
– 1 egg
– 1/2 tbsp sugar *optional*
How to Make It:
Heat griddle. Mix all ingredients together. Spray griddle with cooking spray. Spoon 1/3 cup portions onto hot griddle. Cooks in about 1.5 minutes per side. Serve with butter and syrup!
This only makes about 8 pancakes so you can easily double the recipe if you are feeding more people. I thought this batter was pretty tasty and fluffed up nicely! The toddler and hubby loved them!
