Gluten Free Pear Cobbler

For Mother’s Day at my mom’s house I was responsible for making the ham and dessert.  Since finding out I have Celiac Disease my family has been super supportive and have tried really hard to have food I can eat available.  Dessert is still a tricky one, so I volunteered to make something I could eat.

I decided to make Peach Cobbler with my brand new Jules Gluten Free Flour.   So I packed everything up I would need to bake it when we got there and off we went.

You’ll notice I said I wanted to make Peach Cobbler but this recipe is for Pear Cobbler.   When we got to my mom’s and I started putting everything together I noticed once I opened the SECOND can that the peaches looked funny.  It wasn’t until then that I actually looked at the cans – PEARS!  Time to improvise! So I changed up a few ingredients and made Pear Cobbler.  It was a first for all of us but super tasty.

What you Need:
– 2 cans of Pears
– 1 cup GF flour
– 1 cup sugar
– 1 egg
– 1/2 box of raisins
– 1/2 cup milk
– 1 tsp cinnamon

How to Make It:
Heat oven to 350 degrees.  Put drained pears into 8×8 dish and sprinkle with raisins.  In a bowl mix together the rest of the ingredients.  You may need to add a little more milk if the batter isn’t wet enough.  Pour batter over the pears.  Bake for 35-40 minutes or until top gets brown.  Serve warm with GF ice cream!

Anyone else want to confess to totally messing up a recipe and having to improvise?

    For mothers day I was making gluten free chocolate chip cookies and forgot the step about putting to dough in the refridgerator to chill. So when I baked them they all spread together into one big, thin cookie. I didn’t have time to make anything else. Luckily I called my sister who had already baked gluten free brownies to bring for dessert (we both have celiac). But the cookies were still good (just ugly) and my kids and I wound up eating them over the next few days.

    Sharon – Great story! Sometimes ugly food ends up tasting the best! I had a similar issue with brownies once.
