Pizza has been one of the hardest parts of going Gluten Free. I miss it. Last night when I had a craving for pizza I knew I couldn’t turn to Dominos so I turned to the pantry and fridge. This is what I found Bisquick GF mix, leftover grilled chicken and BBQ sauce = BBQ chicken pizza!
What you need:
CRUST
1 1/3 cup Bisquick GF mix
1/2 tsp italian seasoning
1/2 cup water
1/3 cup oil
2 eggs, beaten
TOPPINGS
3/4 cup BBQ Sauce
1 cooked chicken breast, chopped
1 roma tomato
1 cup shredded cheese, I used cheddar
How to make it:
Heat oven to 425. Mix crust ingredients together and place on greased pan. Bake for 15 minutes.
Top crust with sauce and remaining toppings. Feel free to add whatever you have available! Red onions would have tasted great.
Bake for 10 minutes or until cheese is bubbling.
This was a very good late night treat. I have to say it didn’t really taste like pizza. I think the Bisquick mix made the crust too “bready”. Next time I will try a different GF flour mix. Make sure you spread the crust mix pretty thin because it will puff up during baking.

That looks really good! I’m still working on pizza crust, but I think I’m getting close. Last time I used a combination of 2 “regular” yeast pizza crust recipes just substituting flour and got my best crust yet — It was actually a dough rather than a batter.
