Good Ole Pumpkin Pie

There are some things in life that are just good.  Pumpkin Pie is one of those things.  Fall means apples, pumpkins and cookies in our house.  For Halloween I decided to make pumpkin pie to reward us for all our hard work of Trick-or-Treating!

I used the fabulous Libby’s Famous Pumpkin Pie recipe.   Libby’s Pumpkin is 100% pumpkin and clearly labeled Gluten Free!   The Gluten Free modification I made was to use Whole Foods frozen Gluten Free pie crust.  I also toned down the spices some because we like a stronger pumpkin flavor.

It came out perfect!  We enjoyed ours with some cool whip.
