Weekly Menu March 11th

As you can tell from my last post I’m super excited about Gluten Free Expo season!  For the expos I’m working on recipe cards to give away, t-shirts and ….. a cookbook!  Two weeks ago I decided to write a cookbook that I could sell at the Chicago expo.  I realize this is crazy but I’m making good progress.  The cover design is almost done and another week or two of editing and the book will be ready to print!  Watch out here comes I’m a Celiac’s cookbook!

For t-shirts we are working on designs.  Once I get some mock ups I’ll share them to get votes on which ones to go with. 


Monday – Pepperoni Bake and steamed veggies


Tuesday –  Beef Enchiladas served with Spanish Rice

Wednesday – Hubby and kiddos on their own I have a work event

Thursday – Chicken Stir Fry – One Dish Meal!

Friday – Italian Pork Chops using Tall Papa GF Bread Crumbs (didn’t make it last week)

Saturday –  Dinner out to celebrate brother-in-law’s birthday

    How exciting….I sooo want to go to the expo. I believe it will be the closest one to me….one question if you know is it $35 for both days (early bird) or $35 for one day…
