What food intimidates you? I have been intimidated by a number of foods over the years. Slowly I’m getting brave and trying them one by one. My latest fear to overcome was ginger. Let me say this was not an item that I grew up eating. I never knew how to prep it, how to cook it or what to cook it in.
Ginger was one of those things at the grocery store that I would just walk by and ignore. This past week I got brave and intentionally purchased some. My initial goal was to use it in some juices. After asking my Facebook friends I got some other ideas. This week I have used it in juices, Beef Lo Mein, my water, a salad and a Ginger Chicken Stir- fry.
Holy cow it is awesome! It has such a distinct flavor. I can tell I’ve eaten food with ginger in it at restaurants now that I know what it tastes like. Ginger seems to make other flavors come alive! I have noticed that it goes really well with lemon!
I have to say I’m now a ginger using convert. I will no longer walk by it at the grocery store! I will use it in my recipes! I will spread the ginger-love throughout the world!
Here are how we enjoyed ginger this week!
Beef Lo Mein
Water – 2 slices lemon, 1 slice lime, 1 inch of sliced cucumber, 1/2 inch of peeled ginger. Fill with water and let sit over night. Refill throughout the day. SO refreshing!
Kale Salad – olive oil, lemon zest, lemon juice, sharp cheddar cheese, grated ginger, salt and pepper
