Lemon Cake Cookies #GlutenFree

I remember making these simple lemon cookies as a teenager.  Of course back then I used the Gluten-filled cake mix.  We had some dinner guests over a few weeks ago and I needed a quick and easy dessert.  Something brought these cookies to mind.  With a few changes I was able to make them Gluten Free.  The best part? I already had all the ingredients on hand!


This is a super simple recipe that anyone can make!  I even had all 3 kids help me create these.   It was all fun and games until they wanted to lick the spoon!

What You Need:
1 box of Gluten Free Betty Crocker yellow cake mix
2 eggs
1/3 cup vegetable oil
2 tbsp lemon juice
1/4 tsp of lemon zest
1/3 cup powder sugar

How To Make It:
In a bowl mix together all the ingredients except the powder sugar.  Cover and put in the fridge for at least 30 minutes.

When ready to cook, heat your oven to 375 degrees.  Put the powder sugar in a small bowl.  Roll the cookie dough into balls and coat in the powder sugar.  Place coated dough balls on a parchment lined baking sheet.  Cook for 6-8 minutes.

Recipe makes 18 cookies.

      I’ve never made them that way but I’m sure they’d be good! I’d use a 9×9 casserole dish
