Ronzoni Gluten Free Pasta Spotlight #recipe #giveaway

Two months ago I spotted a new yellow box on the shelf at Wal-Mart in the pasta isle.  To my delight it was a new Gluten Free pasta made by Ronzoni and the best part: the price was only $2.12 per box!  Yes that is right Gluten Free pasta at an affordable price.  I grabbed a box of the penne, rotini and spaghetti.   I then proceeded to use them in a number of recipes!  

Here are some of the many dishes I have made with this yummy pasta!

This has become our family go to pasta.  I don’t have to make GF pasta and regular pasta these days!  Big victory!

The pasta is made with a blend of white rice, brown rice, corn, and quinoa.   This multigrain blend makes a great tasting pasta with a sturdy texture.  I have baked with it, boiled it and used it in a slow cooker.  This pasta has withstood all the tests with flying colors.  Ronzoni has done their research with this product.  It is made in a dedicated Gluten Free facility and each ingredient is verified to be Gluten Free.

For the price and quality it can’t be beat.  Their website even has recipes and coupons!

Southwestern Penne

Ingredients
1 pkg Ronzoni Gluten Free Penne
1 can (14oz) black beans, drained and rinsed
1 cup thawed frozen corn
1 each large red and orange pepper, diced
3 green onions, sliced
1/2 cup chopped fresh coriander leaves
1/3 cup canola oil
1/4 cup lime juice
1 tbsp honey
1 clove garlic, minced
1 tsp each finely grated lime zest, ground cumin and chili powder
1/2 tsp each salt and pepper
1 avocado, diced (optional)

Directions
1. Cook Ronzoni Gluten Free Penne according to package directions.  Rinse under cold running water until cool; drain.
2. Toss penne with black beans, corn, red and orange pepper, green onions and coriander.
3. Whisk canola oil with lime juice, honey, garlic, lime zest, cumin, chili powder, salt, and pepper until combined.  Toss with the penne mixture.  Stir in the avocado (if using) just before serving.
4. May be served warm or chilled.  To serve chilled: refrigerate for 20 minutes.
