Social events can be such a challenge when you live Gluten Free. You never know if there will be safe food for you to eat. I normally bring food to events just to cover my bases. A few weeks ago our friend got married and for the reception she asked a few people to bring desserts. I of course volunteered to bring some Gluten Free goodies for all of us “Custom Eaters”. I also wanted to make sure I’d be able to enjoy a treat at the wedding.
I thought since it was a wedding I would need to make something kind of fancy but also something that was an easy finger food. The answer was Mini Chocolate Chess Pies. Who doesn’t love an individual pie? Seriously, you can have a whole pie all by yourself and not feel bad about eating it all!
I used this recipe as my guide. I made a few changes based on what I had in my pantry.
What You Need:
1 uncooked GF pie crust – I used the Pillsbury pastry dough in the tub
1/2 cup butter
2 ounces of chocolate chips – I used Enjoy Life Foods Dark Chocolate Morsels
1 cup sugar
2 eggs
1 tsp GF vanilla extract
1 dash of salt
How to Make It:
Heat oven to 350 degrees. Grease 2 muffin pans. Between 2 pieces of parchment paper roll out the pie dough to about 1/4 inch thick. Using a circle shape, cut out circles in the dough and place them in the muffin tin. Repeat until all the dough has been used.
In a small pot melt butter and chocolate together, stirring often. In a bowl combine the sugar, eggs, vanilla and salt. Slowly pour the melted chocolate mixture into the sugar and egg mixture. Stir to combine. Then pour into mini pie crusts and bake for 19 minutes.
Makes 15 mini pies.
These were a huge hit with the adults and kids at the wedding. When I left the wedding there were only 2 left on the tray. It was so great to be able to provide a safe dessert option for the Gluten Free guests!

Did you use mini muffin pans or regular size?

For this recipe I used mini muffin pans but you can use regular. Just depends on how many you need.
