Summer is here and that means cookouts. That also means that you may need to prepare a safe Gluten Free dish that you know will be safe for you to enjoy. I have made this dish a number of times for cookouts and it has been a hit. No one can tell it is Gluten Free and it has a nice flavor. You can always tweak the spices to your own taste preferences.
What You Need:
12 oz box of GF pasta – Barilla or Ronzani are my favorites
1/2 red onion, chopped
1/2 pint cherry tomatoes, halved
1/2 cucumber, chopped
1/2 cup carrots, chopped 1/2 cup olive oil
1 tsp balsamic vinegar
1 tbsp GF all seasoning spice blend
Salt and pepper to taste

How To Make It:
Cook pasta according to the box directions. Drain and run under cold water. In a bowl combine all the vegetables and cover with oil, vinegar and seasoning. Pour in cooled pasta and combine.
Refrigerate for at least an hour before serving.

Since there is no dairy in this recipe it can sit on a picnic table for hours and still be fine.

Glad to hear you’ve had success with GF pasta salad! I have thought about trying to make it a few times but my theory was that the pasta wouldn’t be soft enough when cold to be appetizing. Will have to try this š
