Everything Gluten Free Cookies

These cookies are called Everything Cookies because you put so many fun things in them!  The key to success with this recipe is a good Gluten Free Cookie Mix.  To create this recipe I decided to go with Bloomfield Farms Cookie Mix.  On its own it makes great cookies, the taste is awesome, they have a good texture and there are easy to make.

Everything Cookies are so fun since they are filled with all kinds of goodies!  I made mine nut free so the kids could take them to school, they have a nut free school which I fully support!  However if you have a nut loving audience you could easily add a 1/4 cup of nuts or even 1/4 cup of peanut butter.  The sky is the limit with this recipe.

Everything Gluten Free Cookies

Ingredients

  • ½ cup butter, softened
  • 2 eggs
  • 1 box Bloomfield Farms Cookie Mix
  • ½ cup crushed Gluten Free rice cereal
  • ¼ cup Gluten Free oats
  • ¼ cup white or milk chocolate chips
  • ½ cup M&M candy

Instructions

  1. Heat oven to 350 degrees.
  2. With a mixer on medium speed combine the butter and eggs until creamy.
  3. Slowly pour in the Bloomfield Cookie Mix.
  4. Once combined add the cereal and oats.
  5. Carefully fold in the chocolate chips and M&M candy.
  6. Place 1 inch balls on a parchment covered baking sheet and bake for 12-14 minutes.
  7. Makes 2 dozen tasty Gluten Free cookies.

The cereal may sound weird but trust me they bring a fun crunch to the cookies.  The kiddos also have fun “helping” by crushing the cereal in a plastic sandwich bag.  You can use any Gluten Free cereal that is rice or corn based, both will stand up well.

I used M&M’s but you could use Reese’s, toffee chips or anything else you have on hand.

As you can see the cookies bake up great and are nice and fluffy.

To get this recipe perfect, I went through a couple batches that received high praises from my Gluten-loving co-workers.
