It’s been 4 years, let’s party! #GFreefor4

On January 4, 2011 I received my Celiac Disease diagnosis, I finally had the answer to what was wrong with me.  Within 2 weeks of going Gluten Free I was a completely new person!  I felt better, I slept better, food wasn’t my enemy, my mind was clear and within 2 months we were pregnant with twins!  Living Gluten Free was been the best and most freeing thing I have ever done.  You can read my full story here.

Since I am 4 years in I want to celebrate with a party!  One kitchen appliance I really love is my spiralizer so I want to share one with you guys!  Here is a basic recipe and a video of how to use the spiralizer.

    Thank you for doing this giveaway. Your page has been a great source of info over the last year navigating new foods for my daughter who is having thyroid issues. And the doctors not knowing the source of her issues. Going gluten free has been a relief and a struggle.

    I went GF in December 2012- and it was SUCH a good decision. Yeah, I”m 19 and it’s kind of killing my social life, but it forced me to try (and now LOVE) foods that I hated or would never touch. What’s more, I’ve always hated salads, but now I crave one every single meal! I’ve also learned to cook and bake, and now love that too….good god, anybody scared of diagnosis should not be- it can be pretty damn rewarding for more than your gut!

    I received my diagnosis on my 51st birthday! Happy Birthday to me!!! Its been 8 years, and, honestly, I still struggle psychologically. I work in a school where food is included in all meetings, celebrations, etc. This is wonderful, but I get tired of not being able to participate. Not the same when you have to bring your own food! Now struggling with esophageal disease, and all food has to be soft. Food really is an enemy for me!!! Crazy!! The spiralizer looks like a great option for me to be able to fix food in a way I can manage!

    I have been gluten free and dairy free since 2001. I had been quite ill and lost a lot of weight, had severe migraine headaches daily, and could barely function. After testing and then eliminating gluten and dairy, my headaches completely disappeared, the diarrhea and weight loss stopped and I was able to gain back to a healthy weight. But most of all, I regained my life. I continue to be surprised at how many people are diagnosed all the time. I read recently about the use of GMO wheat and corn and the use of roundup to treat the crops while they are growing and to ripen them.
    I have heard of the spiralizer but had never pursued it. After watching your video explaining it, I am anxious to get one. Thanks for sharing that.

    Sorry, just noticed I was supposed to answer a question;
    I’ve been GF for 3 years, quit cheating 2 years ago and put both my kids GF 2 years ago. My mom was diagnosed Celiac about 5 years ago, and it took her that long to convince me. I got so much healthier, my doc apologized for not figuring it out!

    It’s been 31 years since I was diagnosed. It does get a lot easier as you get used to reading labels, and know what to buy and where to get it. And it’s so much better now than it was when I first started the gf diet! I’m so glad you’re doing so well Pam!

    i was diagnosed with gluten intolerance by my dr about two years ago & have been trying to eat clean since then. I do fall off the wagon sometimes & then pay for it by being sick but this past year after visiting the Gluten Free Expo in Dallas, I really found some great tasting gluten free brands that actually taste good. I try not to eat packaged foods, but sometimes if you are in a hurry, you just have to. 🙂

    Congrats on 4! I’ve not kept track myself–I started doing “30 days” and wound up doing several years due to arthritic pain if I “mess up” and something sneaks in I didn’t scour out thoroughly enough. What a great give away!
