This is the first menu plan of 2015! I really hope these help you and your family stay on track, have good Gluten Free meals and relieves stress. I really do plan these meals for my family, create grocery lists from them and attempt to make them each week. Sometimes life happens and we get off track but it is so helpful to have a Gluten Free menu plan. Now that our five year old, Curly, can read she goes to the menu board daily and reads what is for dinner. One night I made Thursday’s meal on Tuesday and she was very confused. As a working mom the menu plans save us!
This week we are back to normal life of work and school. The kiddos have been out for two weeks so we will see how they adjust back this week. I have planned simple meals that will carry over for lunches to help Hubby and I save money, because in case you missed it we are heading to Walt Disney World February 2nd so we are trying to save our pennies for the trip. This will be my first trip to Disney as a Gluten Free eater and I can’t wait! From what I hear they knock it out of the park! Don’t worry, I will give a full review.
Monday – Pasta Bake – this will also be lunch for Hubby and me for at least a day or two
Tuesday – Beef Lo Mein – easy one dish meal
Wednesday – Roasted Herb Chicken with mac n cheese and veggies – leftover chicken will be used in Thursday’s dinner
Thursday – Mexican Lasagna – More lunches for Hubby and me
Friday – Dinner out for MIL Birthday – She is coming to Disney with us! This is huge so we will have a 1 to 1 ratio of adult to kid
Saturday – Hot Dogs and Hamburgers
