Here are the easy family friendly Gluten Free recipes that Cindy and I shared at the Gluten Free Food Fest in Tampa this past weekend.

We created 4 items: spinach pear salad, southwest skillet, allergy friendly puppy chow, and easy breadcrumbs.
Spinach Pear Salad
INGREDIENTS
1 bag of baby spinach
¼ red onion, thinly sliced
½ red onion chopped
1 ripe pear, quartered, seeded and thinly sliced
¼ cup Asiago cheese, shredded
shallot, finely chopped
1 ½ T white balsamic pear infused vinegar
¼ c extra virgin olive oil
pinch of sugar
salt and pepper to taste
INSTRUCTIONS
In a glass measuring cup mix the olive oil and shallots. Heat for 1 minute. Let stand for 5 minutes. Whisk in vinegar and pinch of sugar into the oil.
Plate spinach on serving dish. Dress salad with onion, pear and cheese. Drizzle with salad dressing.
Southwest Skillet
INGREDIENTS
3 cups cooked rice
2 cans black beans, rinsed and drained
1 cup frozen corn
½ cup salsa
½ c shredded cheese
2 T chopped fresh cilantro
INSTRUCTIONS
Mix all ingredients (except cheese) into skillet, heat throughout. Top with shredded cheese and cilantro.
Allergy Friendly Puppy Chow
INGREDIENTS
6 cups of Rice Chex Cereal
½ cup Enjoy Life chocolate chips
¼ cup Sunbutter
3 tbsp Earth Balance non dairy butter
½ tsp vanilla
1 ½ cups powdered sugar
INSTRUCTIONS
Put the cereal in a large bowl
Pour the powdered sugar in a plastic bag
In a saucepan over medium high heat melt the chocolate, sunbutter, earth balance, and vanilla
Once combined pour the chocolate mixture into the bowl of cereal, gently fold to coat.
Pour the coated cereal into the plastic bag with powdered sugar, seal and shake
Cereal Breading
INGREDIENTS
3 cups GF rice flake cereal
3 cups GF corn Flake cereal
1 tbsp GF spice blend
INSTRUCTIONS
Pour all ingredients into a plastic bag
Using a rolling pin or your hands crush the cereal. Shake the contents
Use as an all purpose breading
